Sunday Brunch - Homestead edition

We've had meetups for Sunday brunch, we've had meetups for making things. Let's combine the two and have a meetup for making brunch!
Waffles! Juices! Maybe bloody marys!
A quick tally at the haggis meetup proved that we have access to AT LEAST 5 waffle makers. (There may be more, lurking in closets and sheds.) We never did have a making meetup so I propose we have a waffle making meetup, with a variety of batters and toppings and associated breakfast foods. One mention was of fried chicken, but I don't have a fryer so that would be an option that someone else would have to provide.

If we planned this several weeks out I could probably make some green cured bacon or something.

I will gladly host this, with blueberry waffles of either ordinary or Belgian type.

NB. This is not my address because I'm weird like that. This is actually the address for the Taco Time up the street which will get you to very near me. Message me if you need the actual address. I think most of you already know where we live.

Yum! I'm busy the weekend of 2/28, but otherwise my schedule looks clear. I can bring a round, non-belgian waffle iron.

Home cured bacon sounds delicious!

We might be busy the 15th and obviously there's a Superb Owl meetup on the 1st. Does the 8th or 22nd work for people?
posted by fiercekitten at 9:57 AM on January 25, 2015

I think the 22nd would work better for us.
posted by curious nu at 10:34 AM on January 25, 2015

I don't have a date preference. I do have a regular square waffle iron, and an idea for one or two batters.
posted by Greg_Ace at 4:50 PM on January 25, 2015

Waffle iron: check. I'm looking at mefite-made Will It Waffle? for ideas, but I'm thinking of doing something less adventurous and more breakfasty than waffled mac and cheese.
posted by knuckle tattoos at 7:00 PM on January 25, 2015

Crazy, I guess I forgot that Will It Waffle was mefite-made! I also haven't read it since I first saw it, presumably when it was posted on metafilter, so it looks like there's a lot of ideas to look through here. Waffle Churros!

Waffle donuts! Or the strange waffle toad-in-the-hole from the first page.

Oh man... I'm busy till mid-March with moving-related tasks, otherwise I'd be all over this. But I do have a waffle maker, if by some weird chance you need another one. I got it at Goodwill specifically to make stuffing waffles for Thanksgiving.

I've always wanted to try the cookies-in-the-waffle-iron trick. I had a waffle maker but lost it a couple moves ago. Either the 8th or 22nd is good for us.
posted by Sibrax at 4:20 PM on January 26, 2015

I'm going to set this for the 22nd so I have time to make the green cured bacon.
posted by fiercekitten at 10:17 PM on January 27, 2015

I'm going to start the bacon this weekend.

At last count we had 5 waffle irons. How many people were going for actual waffles and how many were interested in non-waffle waffles? (is that a thing?)

I can provide coffee, tea and vodka for bloody marys (or screwdrivers) and we might have a bottle of champagne for mimosas.
posted by fiercekitten at 11:42 PM on February 13, 2015

I will bring 1 waffle iron and one waffle batter/ associated toppings. Not sure what yet- I didn't have any groundbreaking ideas yet, so maybe crisp cornmeal waffles and blueberries or other fruit.
posted by Secretariat at 8:18 AM on February 14, 2015

I've got an overnight-yeast batter I'd like to try, and I can also bring pecans to add to this or someone else's batter. I can also bring bloody mary mix.
posted by Greg_Ace at 12:46 PM on February 14, 2015

I usually make an allergy free waffle mix, so I'll probably do that. I have an extra waffle iron so it's open for non waffle foods like scrambled eggs or donuts.
posted by fiercekitten at 10:12 AM on February 15, 2015

Do we need more breakfast meat than the long anticipated green-cure bacon?

I can bring some of last-summer's berries as a waffle topping a/o a mixer with bubbly. And more bubbly.

(Remind me what allergies we are working with?)

janell: Remind me what allergies we are working with?

Eggs, dairy, nuts, fish/seafood

Mmmmmm, fish waffles...

I was trying to figure out whether everyone was bringing their own batter or not, but I figure: might as well bring a whole batch, we can just cook and take home leftovers! BATTER UP etc
posted by curious nu at 5:44 PM on February 15, 2015

I've found that about 1 1/2 c. flour will get me 6 waffles (4 Belgian) so if people want to try a bunch of different waffle types we can get a final count and estimate how much we'll need.

I checked our closet and we seem to have given the champagne away and the only vodka we have is honey vodka, this one specifically, which may not work for bloody marys. We will have orange juice tho.
posted by fiercekitten at 7:41 PM on February 15, 2015

Okay then, mimosas it is! Instead of bloody mary mix I'll bring a bottle of champagne.
posted by Greg_Ace at 7:40 PM on February 16, 2015

I was planning to bring one too, so we should be good for various fruit+bubbles options.
posted by janell at 8:31 PM on February 16, 2015

I think I have some St. Germain- if so, I'll bring that too for extra fanciness.
posted by Secretariat at 11:27 AM on February 17, 2015

We have some vodka that's been sitting in the freezer for a while, but I think I prefer bellinis.
posted by mimo at 1:47 PM on February 17, 2015

We will be there! Probably with cookie dough.
posted by Sibrax at 4:28 PM on February 17, 2015

Would anyone be interested in a savory waffle? I'm thinking cornbread and bacon?

I just tested out a vegan blue cornmeal waffle recipe this morning and I think it tastes pretty good, if a little hearty- I was planning on bringing that. It would probably taste pretty good with some bacon bits tossed in, though?

I dunno, maybe I'm stepping on your waffletoes. But I think a cornbread waffle would be in very similar waffleterritory to the cornmeal waffle I've got in mind?

vegan blue cornmeal waffle recipe ... with some bacon bits tossed in

Probably not vegan?
posted by Greg_Ace at 9:55 PM on February 18, 2015

Well... the recipe is vegan by default. I was really only trying to find a recipe without dairy and eggs (and fish).
posted by Secretariat at 2:57 PM on February 19, 2015

(Bacos are vegan)
posted by rabbitrabbit at 3:02 PM on February 19, 2015

I will bring a non-cornbread savory waffle. I will attempt egg/dairy free as well since my plus one is also allergic to eggs. and maybe a citrus-y fruit salad?
posted by vespabelle at 6:57 PM on February 19, 2015

Oh, we will bring some vodka as well, in case anyone changes their mind about the bloody marys.
posted by Sibrax at 3:56 PM on February 20, 2015

Since it seems like the allergy-free waffles are pretty much covered, I guess we'll just bring.. regular batter? I don't want to seem like a jerk, though. ;P

Also wondering about what toppings are available. From days of yore, I have always eaten either syrup-waffles or PBJ-waffles.
posted by curious nu at 4:16 PM on February 20, 2015

I guess we'll just bring.. regular batter?

Why not - after all, we'll need some sort of baseline to differ from, right?

Also, I have a jug of syrup (pure maple) I can bring.
posted by Greg_Ace at 5:32 PM on February 20, 2015

Being allergy free isn't super important as long as it's labeled so if someone wants to make cheese waffles or something, that would be OK.

I saw a recipe for puffles this morning and am thinking about those instead of my usual recipe.
posted by fiercekitten at 5:47 PM on February 20, 2015

Puffles.

Anyone up for chicken & waffles?
posted by Greg_Ace at 8:35 PM on February 20, 2015

I am absolutely up for chicken and waffles, but I wouldn't presume to bring fried chicken to any event attended by an actual person from the South. New England is not exactly a hotbed of artisanal chicken frying.
posted by janell at 8:57 PM on February 20, 2015

Ehh - it's chicken. It's fried. There's no southern magic, other than maintaining a steady oil temp to keep it crispy/non-greasy (that's where a big-ass cast iron "heat sink" comes in handy), and not cutting corners on ingredients or process.

Anyway, I'm not set up to make "proper" homemade fried chicken - unless someone has a 14-inch cast iron skillet they can bring, in which case I'm willing to give it a shot - otherwise, after a couple mimosas even Fred Meyers' deli chicken tastes pretty good!
posted by Greg_Ace at 10:13 PM on February 20, 2015

I'm wafflin' up some cheese! Mostly because my vegan recipe idea crashed and burned, and then I saw that cheesy waffles would be fine. I'll bring a waffle iron to make these on.
posted by knuckle tattoos at 12:02 AM on February 21, 2015

We have Mrs Butterworth fake syrup and someone mentioned berries of some sort. I also have blueberries in the freezer and a couple of bananas we could use.

I'm making carmelized onions plus the bacon and I bought butterscotch and chocolate syrup. For either sweet or savory puffles.

Going to make a quick stop, and then we'll be on our way over.
posted by Sibrax at 10:19 AM on February 22, 2015

Well, my overnight yeast batter may not have risen to the occasion. But I'm bringing it as-is, and an iron, and champagne, and real maple syrup; and just to sweeten the pot maybe I'll stop by the Fred's near the host's house and see if they have any fresh fried chicken I can bring along.
posted by Greg_Ace at 10:22 AM on February 22, 2015

Yum! I am stuffed and pretty much useless for the rest of the day...and loving it! I've also now got a few new waffle recipes/ideas to try in the future, so that's cool too.

Thanks for having us all over so we could break your kitchen! The bacon was delicious.

The waffles were delicious.

Everything was delicious.

(the waffle cookies even set up as they cooled- I just ate a leftover one and the texture seemed right, not fall-apart-y at all.)

Thanks for having us! So many delicious waffles. All my afternoon aspirations evaporated into a very long waffle-filled nap.

fiercekitten, on further consideration, I think your puff pastry waffles didn't work because they were actually phyllo waffles and not puff pastry.

I think you're right. Next time I'm going full white trash tho and using refrigerated biscuits. The discussion of the churro waffle made me realize that the only way to delicious puffles is to skip fancy and go right to "don't give a shit".
