My gougères came out flat (boo), but they were delicious, like gougères should be.
Also, my friend sent me her recipe for Oatmeal Bread. It comes from The Infantry Center Cook Book 1958-1959, Fort Benning, GA, with modifications by her Mom:

Also, my friend sent me her recipe for Oatmeal Bread. It comes from The Infantry Center Cook Book 1958-1959, Fort Benning, GA, with modifications by her Mom:
Mix:
2 cups rolled oats
2 cups boiling water
1 heaping tbsp shortening
Let is sit for a few minutes.
Add and mix well:
1/2 cup molasses
1/2 cup sugar
1 tbsp salt
2 cups cold water
Add 1 pkg dry yeast and mix.
Add 10 cups sifted all purpose flour.
Mix with 10 cups of flour and run in mixer with dough hook for 15 minutes or so until it’s ready.
Or knead it by hand. The dough may be kind of sticky.
Cover and let rise til doubled.
Punch down, divide into three loaves in greased pans.
Cover, Let rise again til doubled.
Bake at 400° for 10 minutes, then 350° for 40 minutes.
